What makes me so Crazy & Hip?

My blog was begun a little under 1 year ago when I found out I was pregnant, surprisingly, with my third child. Since then, I’ve shared every emotion a woman goes through during the pregnancy, birth and subsequent 4 months of his life and mine with my blog readers. I’ve actually been blogging for over 2 years, and I learned that in order for this blog to help ME, which is why I do it, I had to stop worrying about what my readers would THINK OF ME, and just write from my heart. On those dark days when new motherhood has gotten me down on the mat, I come here and write. And sometimes although NOT often someone will say “Yeah, I know what you’re talking about… you’ll get through this… or you’re doing the right thing, etc.
I don’t hold back. Or at least, not for most of the areas of my life.
Now the blog has taken on a family blog feel, not just a pregnancy or new baby smell feel. I write about my everyday stuff, fun stuff I find, etc. Again, it’s my blog, so I write what Iwant and you know, if you like it, great! If I’ve made a new blog friend or two, even better
SO I suppose what makes my blog so supercalifragilistically wonderful, is that it’s written by a real woman, dealing with real issues, real kids and ya know, real PSYCHOSIS! lol

Recipe Rally – Healthy Stufffffs

- 4 Boneless, skinless chicken breast halves
- salt & pepper to taste
- 1 Tb flour, for dusting
- 1 Tb olive oil, divided
- 1 onion, chopped
- 4 garlic cloves, pressed
- 1/4 c. white wine
- 1/2 c. tomatoes, diced
- 1/3 c. chicken broth
- 8 fresh basil leaves, chopped (remove stems)
Season the chicken with salt & pepper and dust lightly in flour.
In a skillet, heat half the olive oil over medium-high heat. Saute’ the chicken and brown on both sides, about 4 minutes each side. Remove from pan and keep warm.
Add remaining olive oil and heat, then add the onions and garlic in the pan; saute’ until the onion is translucent. Add the white wine and then, using a wire whisk, deglaze the pan. Now add the tomatoes and chicken broth. Allow the sauce to simmer and reduce the sauce to the desired consistency.
Last, add the basil to the sauce and return the chicken to the pan to heat. Serve chicken with sauce over the top.
