I love living here

Franconia Notch State Park, NH – home of the Old Man in the Mountain (formerly) and also, home of some of the very BEST sunsets ev-er.

What a beautiful day yesterday was!  I spent most alot of the day cooking, but amazingly, everything I made came out AWESOME.  I made muffins in the morning and they came out awesome.  Then I had to go buy Jack Daniels so I could marinate the ribs – no, seriously! It was for the ribs! But unfortunately, I’m supremely cheap frugal so instead of the $12 they wanted for JD, I spent $6 on Jim Beam.   Then we came back home and got drunk made the marinade.  The marinade, from over at New Urban Mom’s, was nice & easy to put together, but I was pretty concerned about how it was all booze pretty strong, so I also threw in some ketchup. Cuz I’m a wuss. 

After I put that in the fridge, I did this cucumber & tomato salad from over at My Wooden Spoon.  Super easy, but again, I added my own touch – cuz I’m like that.  Also, because I am growing these fresh herbs outside my door and am stuck up like that.  I really hate it when, at the end of the summer when I’ve got to either throw out or freeze what I’ve not used!

zach-outside libby-outsideAnyway! THEN! We went outside and spent some time playing with some bubbles and balls and whatnot.  We had fun and Zachary absolutely LOVED being outside.

I really don’t let him outside because of the other monsters kids that live around us.  They were all in their pens yesterday, apparently, so it was safe for MY kids to play LOL

Pretty soon, it was time to get everything cooked and ready.  Most of the day, Jimmy worked on writing a new song for my new photography site – how cool is that?   I’d also made potato salad and burgers for the kids, because neither of them are into ribs (plus I didn’t know how they’d come out with all that booze!)

In a word?

YUM!!  So the bbq sauce was from a bottle, and only went on about 10 minutes before I took them off the grill.  But this is the VERY FIRST TIME I cooked ribs on the grill, and they were excellent!  That marinade from New Urban Mom’s recipe? Excellent!

YUM!  I couldn’t believe how good this turned out – how fresh!  Nothing got soggy, everything remained crisp and yummy!  LOVVVVED it.

My nana’s potato salad recipe is just AWE-SOME.  AWE-SOME, people.

After we ate, we all went off to do our own thing for a while. Zachy & Jimmy took naps, I worked on my fireworks pictures, Anthony & Lib played video games.  At around 7, we headed down to “the Notch” – Franconia Notch State Park to watch the sun set.  There’s a really cool bridge that looks out over the valley, so we love to go there on summer days.

I know, I know – too many pictures. But my mom & brother were supposed to come up this weekend, but between my dad’s job sucking so badly and not paying him ANY bereavement pay (even though he’s worked for them for 22 years!), and gas prices, they stayed home. So I wanted to show them what we did so they’ll feel like they were here :)   We missed you guys and love you!

PS – Tommy, I’m so very very sorry for the loss of your friend.
